After sodium benzoate is fully dissolved, suspending agents and citric acid can be added sequentially. It should be noted that sodium benzoate, citric acid, and suspending agents must be added separately, especially sodium benzoate and citric acid, as simultaneous addition can result in precipitate formation.
    • In condiments such as soy sauce, sodium benzoate is typically added during the heat sterilization process. Raw soy sauce is placed in a sterilization device, and sodium benzoate is added when the sterilization temperature (usually between 65°C and 75°C) is reached. Sodium benzoate can be dissolved in hot water or nearly 80°C triple-filtered oil before addition.
  2. Dosage Control:

    • According to relevant regulations in China, the maximum usage of sodium benzoate in food must comply with standards. For example, the maximum usage in carbonated beverages is 0.2g/kg, and in soy sauce and sauces, it is 1.0g/kg.
